Application:
Monosodium glutamate is used as a food additive and is commonly marketed as a flavour enhancer.
Physical Properties:
No moisture absorption. Heat and light stability, 10% aqueous solution at pH 6.9 ventilation under the condition of 100 ℃ heating 3 h decomposition rate of about 0.6%. Lose crystal water heated to 120 ℃. Melting point 195 ℃, relative density 1.635, the bulk density of 1.20. Soluble in water (71.7 g / 100 m1), slightly soluble in ethanol, insoluble ethyl ether. 5% aqueous solution pH 6.7 ~ 7.2.

Monosodium Glutamate, also known as sodium glutamate and MSG, is a sodium salt of the non-essential amino acid glutamic acid.Trade names of monosodium glutamate include Ajinomoto, Vetsin, and Accent. It was once predominantly made from wheat gluten, but is now mostly made from bacterial fermentation; it is acceptable for celiacs following a gluten-free diet.
